2nd visit of the outing: Busy footfall for our late Saturday afternoon visit with a few others who had just attended the Juddians' beer festival. Prompt, friendly service at the bar and a table and seats to be had.
| Full Circle - Marmalade Mild | 3.90 |  | This mild from the Hoults Yard complex, within the Ouseburn and Byker craft beer hub in Newcastle upon Tyne, came with a very good head and lacing and lasting. A fruited bitter first bite. A certain bear's marmalade rising on the taste buds with malty notes of spice and honey and likely to be from pale and crystal malts used. A dry fruitiness winning over from its Amarillo and Goldings hops lending it citrusy hints before padding out after a good hug from the addition of actual marmalade in the brew's infusions. This is likely to have been added at the end of the boil or during the whirlpool process, the latter process referring to using a pump or a paddle to spin the sugary liquid extracted from malted grains during the mashing process*, allowing the heat to dissolve the sugars and pectin, the latter referring to the natural substance found in the cell walls of fruits like oranges, while pasteurising the fruit to prevent contamination. To achieve a "fresh" fruit character, fruit or preserves are sometimes added during or after the first fermentation to maintain the delicate aromatic compounds that might otherwise be lost in the boiling process. Rather too sweet for my liking and so just a half sufficed but it might well have made a good liquid spread on toast or even in a certain bear's sandwiches. Full Circle Brew Co was founded in 2019 and was new to me to try on this visit. *In mashing, crushed malted grains are soaked in hot water to activate enzymes that convert grain starches into fermentable sugars. |

Last hour of opening visit until close. The few in were knocking it back. As a nightcap ordered a keg Orbit (collaboration with Utopian) 7.4% Baltic Porter but it fobbed and was impossible to fill a glass so second opt was for UnBarred King Conka 10% Imperial Stout.

I was very impressed with this place. Good food, good beer, prices lower than I'm used to in London.
